PEANUT BUTTER AND JELLY COFFEE ROLL
There aren’t many people who don’t like peanut butter and jelly, or have some fond memory in their life time about it . For me it was the satisfying ‘treat’ that our nursing school provided in the nurses dorm kitchen. It was eaten by many of us as we crammed for those ‘blue book’ exams or between working shifts.
This is a two part recipe. Sounds daunting, but pretty simple, really. It will go over big with your family or company..
PEANUT BUTTER & JELLY COFFEE ROLL 1
Dough:
- 1 cup milk Scald milk
- ½ cup sugar Stir in sugar & allow to cool to luke warm
- 1 tsp. salt
- 1/2/cup oleo Stir in large bowl with water & yeast.
- ¼ cup warm water
- 1 pkg. yeast
- stir in milk mixture
- 1 egg
- ½ cup flour.
Beat. Until smooth.
4 ½ cups flour Add remaining flour
Cover lightly with foil.
Refrigerate 2 hour – 3 days

- 1/3/ cup peanut butter
- 3 Tbsp. oleo
- 3Tbsp oleo
- 1/3 cup jelly
- Frosting and chopped nuts.
Roll out half of dough to 30 x 5 strip. Blend PB and oleo., using half for one strip. Spread on dough. Top with half jelly. Fold in 1/2 length, don’t seal the edges.. Twist it 6 times, place on greased cookie sheet, form coil. Cover and let rise until double. Bake375 25 min. Frost and sprinkle with chopped nuts.
