RECIPES FROM THE PAST: SENATE BEAN SOUP

As especially good bean soup.

                                         SENATE BEAN SOUP

About 50 years ago this recipe was touted as the famous soup of the U.S. Senate cafeteria. I can’t really tell that it’s the truth, but I know I’ve been making this bean soup ever since, and I don’t care where it was first make.   Wherever it originally came from doesn’t make a difference. It’s still delicious..

 

SENATE BEAN SOUP

  • Piece of ham, butt end or shank
  • 1 cup chopped onion
  • 3-4 potatoes cubed
  • 1 bag marofat or navy beans soaked overnight or  by directions
  • 2 cups celery
  • 1 clove garlic
  • 1 grated carrot

Cook ham about 1 ½ hour. Cut in small pieces. Add other ingredients  and cook until beans are  tender.
