RATATOUILLE
A really good time of the year for this delicious dish, with fresh vegies at the market and in your garden. What better way to compliment a meal than to dice up something really tasty.
RATATOUILLE
- 3 Tbsp. olive oil
- 1 unpared eggplant
- 2 med onions, sliced
- 2 small zucchini
- 1 garlic clove, minced
- 1 bay leaf
- 2 peeled tomatoes
- 3 bacon slices
- 1 green pepper, cut in strips
- 2 tsp. salt Pepper.
In Dutch oven, in hot oil sautee onions and garlic until tender. Add tomatoes, peppers, egg plant, zucchini, and bay leaf. Sautee over heat 15 min. Meanwhile fry bacon crisp. Crumble and add to veg. with salt and pepper. Cover. Simmer 15 min. Uncover, Simmer 10 min. Remove bay leaf and serve. Enjoy
