A very special pie. From the old cookbooks of the Pennsylvania Dutch.

                                     LEMON SPONGE PIE

I think everyone has their favorite pie. My grandson likes apple, my husband liked shoe fly, but right there at the top of the list is my favorite. LEMON SPONGE PIE. Served slightly  warm….mmm, delicious, melts in your mouth!!

LEMON SPONGE PIE

  • 1 cup sugar
  • ½ cup flour
  • ¼ cup melted butter
  • 1/8 tsp. salt
  • 2 eggs separated
  • Juice of 2 lemons & grated peel
  • 1 cup milk
  • 1 unbaked pie shell

Combine sugar, flour, butter, salt and egg yoke. Beat until smooth.

Beat in lemon juice and peel. Add milk beating slowly.

Beat egg whites until stiff. Fold into batter. Bake pie shell at 350 for 5 min.

Pour in filling. Bake 40 min. or until firm
