RECIPES FROM THE PAST: LEMON BARS

A great dessert or snack or a take-along dish for parties and celebrations.

                                                 LEMON BARS

The recipe for lemon bars is somewhat newer than most of my collection. It came from my daughter who suffers from a monumental latex allergy. Everything she can eat comes from much research and investigation.  She often makes Lemon Bars, after making sure there is no ingredient that will cause an anaphylactic reaction. She is developing a blog to help other victims of this frightening, ever increasing allergy.

The recipe is great for anyone looking for a new dessert or snack. It makes a good quantity if you want to take a dish along to a cookout or family gathering.

 

LEMON BARS

For base:

  • 2 cups flour
  • ½ cup powdered sugar
  • 1 cup butter
  •   Mix and press in to 9 x 12 pan. Bake at 350 20 – 25 min. or slightly brown.

For top:

  • 4 large beaten eggs
  • 2 cups white sugar
  • 1/3 cup lemon juice
  • ¼ cup flour
  • ½ tsp. baking powder

Mix together, pour over crust. Bake at 350 25 min. Cool and sprinkle with

Powdered sugar. Cut into bars.
