A deicious satisfying dish.

                                   LASAGNA SQUARES

A meal everybody loves. An old favorite that satisfies just about everyone.

 

 

LASAGNA SQUARES

  • 1 med. Onion chopped
  • ½ green pepper chopped
  • 2 cloves garlic minced
  • 2 Tbsp. oil
  • 1 quart tomatoes
  • 1 6 oz. can tomato paste
  • ½ tsp. oregano
  • 1 bay leaf
  • 8 oz. lasagna noodles
  • 1 lb. ricotta cheese
  • ¾ cup parmesan cheese
  • 8 oz. mozzarella grated
  • 1 egg. Salt , pepper. and parsley

Sautee onion, green pepper and garlic in oil. Stir in tomatoes, paste, oregano, bay leaf. Simmer 20 min. Cook noodles and drain. Combine ricotta, egg, 1/4 cup parmesan, salt and pepper. Remove bay leaf.

Spoon 1/3 tomato sauce in bottom of dish. Cover with 1/3 noodles, ½Ricotta mixture, ½ mozzarella and ¼ cup parmesan. Repeat layers.

Bake at 350 for 45 min. Let stand a few min. before cutting into squares.
