RECIPES FROM THE PAST: ITALIAN SAUSAGE AND POTATO PIE

An easy main dish.

                                   ITALIAN SAUSAGE AND POTATO PIE

A hearty, delicious main dish.  Needs only sides.

 

ITALIAN SAUSAGE AND POTATO PIE

  • 1 package sweet Italian sausage
  • salt and pepper to taste
  • 2 – 3 baking potatoes, peeled and  thinly sliced
  • 1 ½ cups ricotta cheese
  • 1/4 cup olive oil
  • ½ cup parmesean or ricotta cheese
  • 1 tsp. minced garlic
  • ¼ cup milk½ tsp. dried Italian seasoning

Cook sausage, slice and reserve. In mixing bowl toss potatoes, garlic, seasoning, salt and pepper. In shallow baking dish arrange 1/3 potato mixt. slightly overlapping layers. Place half the sausage slices over potatoes. Spread  half the cheese mixt. over sausages. Repeat layers ending with potatoes. Bake 1 hour at 375 or until potatoes are done and top is golden and crisp.
