RECIPES FROM THE PAST: HARVARD BEETS

Harvard beets is a tasty way to enjoy red beets instead of buttered or pickled.

                                                 HARVARD BEETS

Unless you are a farmer or a gardener I would advise you to start with canned red beets because cooking and cleaning raw beets can be a job. This is a simplified version that takes only minutes to make and is a good alternative to peas, beans, etc.

HARVARD BEETS

  • 2 cans red beets
  • 2/3 cup sugar
  • 2 Tbsp. cornstarch
  • ½ cup vinegar
  • ¾ tsp. salt
  • 1/3 cup butter

Combine sugar, cornstarch and beet liquid, and salt. Simmer and add beets. Add butter. Enjoy!
