RECIPES FROM THE PAST: CHOCOLATE OATMEAL CAKE

This delicious cake will become one of your favorites.

                                CHOCOLATE OATMEAL CAKE

This cake recipe has been around for  at  least 45 years and maybe longer .I know it was a favorite of several of the chocolate cakes I used to make. One nice thing  about it, it  includes an easy frosting that completes the cake without  having to let it cool, etc.

CHOCOLATE OATMEAL CAKE

  • 1 ½ cups hot water
  • 2 eggs
  • 1 cup uncooked oatmeal
  • ½ cup cocoa
  • ¼ lb. butter
  •   1 ½ cups flour
  • 1 ½ cup sugar
  • 1 ½ tsp . baking soda
  • 1 tsp. salt

Mix hot water with oatmeal and allow to stand 20 min. Cream butter, sugar and eggs. Mix well. Sift dry ingredients and add to  butter mixt . Add oatmeal and mix well. Pour into greased and floured 9 x 13 in. pan and bake at 350  about 35 min or until almost done. Remove from oven and spread topping. Bake another 4 min.

Topping: 6 Tbsp. melted butter, 2/3 cup brown sugar, ¼ cup cream or canned evap. milk,1 tsp vanilla, 1 cup coconut , ½ cup chopped nuts.
