RECIPES FROM THE PAST: HAM, CHEESE, POTATO BAKE

A family pleasing meal from holiday ham. Stretch the budget and warm the appetite.

                       HAM, CHEESE POTATO BAKE

It’s soon going  to be that time of year when we  think of ham. I hasten to add, if you are of a different persuasion this recipe can be adapted to lamb or whatever meat you choose or enjoy.  Traditions vary with culture, ethnicity,or preference.This is an  especially good way to use up the left-over meat from a holiday feast, and come up with a mouth watering dish that’s sure to please  the most finicky eater.

This is an easy, time saving  recipe. Simply cube a few cups of your favorite  meat, peel and slice a few potatoes, chop an onion and follow the easy directions.

HAM, CHEESE, POTATO CASSEROLE

    • 3 Tbsp. butter
    • 3 Tbsp. flour
    • 1 cup minced onion
    • 1 tsp. salt
    • Pepper
    • ½ cup milk
    • 1/2cup dry milk powder (optional)
    • 4 med. Potatoes, peeled and sliced
    • 2 – 3 cups diced ham
    • 1 cup shredded cheese
    • Melt butter, add onion and cook about  5 min. Stir in flour, salt and pepper, then milk. Cook until it boils and thickens. In 2 quart  baking dish, layer half the potatoes, ham and sauce. Repeat layers and sprinkle with cheese.
    • Bake covered 45 min.. Uncover and bake 15 min. longer or potatoes are tender.
